    Recognized as the Cognac of tea - We present an exceptionally rare Tong Mu Phoenix Tree Lapsang Souchong wildly grown in the pine forests of Wuyishan, Fujian, China. It's complex flavour profile and scarce production quantity (Under 1000kg per year) make it one of the most expensive teas in the world.

    How It Tastes

    Lightly smokey, with a burnt-woodsy body, intriguing malty notes with a subtle tail note of cognac and molasses.

    How To Brew

    Steeping times for this Lapsang will depend on your desired taste. 2-3 mins for a mild cup and 5 minutes for a bolder, stronger flavour. If possible, we recommend using the Gongfu brewing technique for an exquisite result. Good for up to 5 infusions using this skillful method.

    • 2 level tsps. / 6-8 oz serving
    • Water temperature: 100°C (Spring water recommended)
    • Steeping time: 3-5 mins or Gongfu method

    Food Pairings

    We suggest pairing your Tong Mu Lapsang with dark, charred meats, sweet decadent cakes, barbecue/ jerk chicken and gravy based recipes.

    A smokey mistake - It is believed that Lapsang Souchong was actually created by accident!

    legend has it that in the early 17th century when the Chinese tea producers began to export their teas to Europe and America, their traditional green teas did not retain their quality vey well, as the journey over land and sea was typically 15-18 months. Afraid that their unappealing teas would be seen as poor in quality to their purchasers, the Chinese tea manufacturers used the local pine wood from the surrounding forests to heat the tea leaves in hopes of preserving the quality, and as the wood slowly burned, it gave off a certain amount of smoke that was absorbed by the drying tea and gave it a lightly smoked, maple, woodsy, pine character. This flavour characteristic is what we now know and appreciate as Lapsang Souchong.
